Porterhouse steaks got their name from the old world European Porter Houses. They would order their T-bones from the larger end of the short loin, thus became “Porterhouse Steaks.” Porterhouse and T-bone steaks are cut from the same part of the beef loin as Filet Mignon and New York Strip. These steaks are lean in marbling and have a distinct bold flavor originating within the bone. Either becomes a favorite with homemade barbecue sauce or marinade and an evening on the grill.
